Fresh Peach Pie

Here is the recipe for Fresh Peach Pie from Roxy Morton
shared by her daughter-in-law
Makes 1 9" pie
 
You need 1 Prebaked 9" Pie Shell
 
1 Cup Sugar
1 Cup Water
Heat the above mixture in saucepan until sugar dissolved and looks smooth
 
2-3 Tablespoon Cornstarch
1/4 Cup Water
mix together and add to the above; cook on medium heat until bubbly and thickened. Remove from heat. Stir in
4 Tablespoons Peach jello until dissolved. Cool!
 
Pour small amount of thickening into pie shell, just enough to cover the bottom. Fill pie shell with about 3 Cups of fresh sliced peaches. Pour remaining thickening over peaches. Refridgerate until set about 2 hours. Top with Whipped topping before serving!
